It’s a shellfish celebration at Hapuna Beach Prince Hotel, where the popular oyster bar is back in business after an eight-year hiatus. The resort’s Coast Grille restaurant — notable for buying seafood only from local vendors — lays out an array of seasonal oysters on the half shell or as shooters. Current specialties include the Thai Shooter with lemongrass, sweet pineapple, chili, kaffir lime vodka and pickled vegetables, and the Sake Shooter with sake, ponzu, ume plum juice and shiso. Sharing the spread are local delicacies such as saltwater-poached Kona abalone and fresh catch poke (seasoned raw tuna).
